Ingredients
- 1 Tbsp olive oil
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 1/5 lbs ground turkey
- 1 Tbsp taco seasoning
- 1-2 tsp paprika
- to taste salt
- 1 15oz can corn
- 1 15oz can black beans
- 1 15oz can pinto beans
- 1 15oz can red kidney beans
- 1 28ox can whole plum tomatoes, pureed
- 1 6oz can tomato paste
- 2-3 c chicken broth
- 1-2 tsp cumin
- to taste cayenne
- sour cream
- shredded cheese
Servings: cups, app.
Instructions
- Heat oil in bottom of stock pot
- Saute onion until translucent, about 5 min
- Add garlic ad saute for 1-2 min more
- Add turkey, taco seasoning, salt, and paprika
- When turkey is browned, add corn, beans, tomatoes, and 1c of broth
- Simmer for at least 1 hour, stirring regularly and adding additional broth as needed
- Garnish with sour cream and/or shredded cheese, as desired
